This is one of our real strong points! San Isidro Lodge is one of those out of the way, special places that creates and serves food quality that one tends to only find in the top restaurants of larger cities. San Isidro’s culinary style is original, cutting-edge and always evolving, using modern culinary techniques, while maintaining a level of harmony with the flavors and textures of our typical Amazonian and Andean products. The menus rotate naturally based on the products of the season. This is all the result of years of research of forest-based, Amazonian products that we then incorporate into delicious recipes. We often incorporate exotic fruits like motilón, lucuma, chigualcán, arazá, and many others, that will surprise you. Other flavors from the forest are also incorporated into our menus like granizo and arrayán, helecho yuyo and the local bamboo. By purchasing and harvesting products directly from the indigenous communities we help promote sustainable agriculture, contribute to the perpetuation of Amazonian products and help give added value to ancestral culinary knowledge. Carmen, the chef creator of the San Isidro’s kitchen has worked for years researching and rescuing the ancestral Amazonian products, coming up with unexpected haute cuisine recipes that ensures that your stay at the lodge is a unique culinary experience.
